Healthy Cooking

Chef SethThe Center for Healthful Living at Oxford College (part of Emory University) held "Healthy Week at Oxford." They asked the husband of DHPE's Deputy Director, Pam Eidson, Seth Tepfer to cook because someone had said he was a healthy cook. He made a variety of meat-free dishes using low oil and lots of fruits and veggies, with recipes drawn from a variety of sources. VIEW RECIPES

The menu consisted of..

kale popcorn
oat flour
almond milk
home fries
chocolate zuchini muffins
carrot dill soup
Hawaiian teriyaki chickpeas with pineapple-mango salsa
lentils and rice
kale pasta with walnut sauce
strawberry and spinach salad with balsamic-dijon vinaigrette
banana ice cream
moon dust

Chef Seth said, "I made double batches of the muffins, the lentils and rice, ice cream, home fries, kale popcorn... triple of chocomole and salad.  All gone except a bit salad and chocomole. That is a good sign.  Participants and helpers were pleased. I'm happy also.  Folks were talking about new recipe ideas they learned."
